Does anyone know what I'm talking about? Sometimes the skin under the shell will allow you to just peel the shell right off. Other times, it's like it's fused to the white, and you have to spend a good 5 minutes trying to pick all the shell pieces (along with significant portions of the white) off the egg.
Why?
Why is it that hardboiled egg shells sometimes come loose easily but other times hopelessly stick?
run them in cold water after you boil them, makes them peel easier
Reply:Fresh eggs will ALWAYS stick. Older eggs(not rotten), will not stick. That is just the way it is. Salt, cold water, soaking, oils, all that stuff is just myth. Now you know.
Reply:You are cooking them just a little bit too long (same reason the yolk turns an ugly color). The cold water trick is a good one :)

Reply:when the shells stick like that, you've got fresh eggs...it's always best to boil older eggs because the shells pop right off!

Reply:try this....boil eggs....put under cold tap....drain....bounce eggs in pot a few times {shake them}....the bouncing pings the shells as the cold water contracted them to the hot centers.....shells will now fall off with mninimum effort

Let the eggs sit in cold water for about 5-7 minutes after they're finished boiling. That will help the peeling process. Also, it depends on the age of the egg.... if it's an older egg, it will peel easier than a fresh egg.

If the eggs aren't so fresh they will pop right out! :)
Reply:when cracking the shell bang it all around so the whole shell is cracked. believe it or not it will come off easier. and then peel it. if there still is shell on it just rinse it off with water.
Reply:What you should do is this. After boiling the eggs, soak them in cold water for a few minutes, and while they are soaking, crack them lightly and roll them over on hard surface gently. In this way, the shells can easily come off and also there wont be a greyish color on the surface of the eggs after peeling. Happy trying...

Get a pot of water on the stove. Put in the eggs. Turn that sucker to high and boil them for 11 minutes. Take the pot off the heat, and let it sit for 2 minutes. Then put the eggs into a bowl of ice water. When they are cool, the shells will fall right off when cracked.
Reply:I've learned through experience to let my eggs sit out to room temp b4 boiling, after they've boiled, I immediately pour hot water off and shock them with ice cubes. The eggshell comes off easily. Good Luck!
