What is a good substitute for spinach when making stuffed shells?
If you don't like spinach, just chop some chives or parsley into the ricotta. It will add the color, and not a lot of flavor.
Reply:Arugula or watercress will give you a nice peppery taste, italian (flatleaf) parsley will add a nice, fresh flavor and basil would be good as well. Myself, I love sneaking a little cilantro into my Italian food; it tastes good and baffles my guests.
