I want to use those scoopable tostitos as mini-pie shells for finger food-what should I fill them with?

This sounds like a variation of the "tart"? Interesting idea.

Maybe you can use combination ingredients that you would find on a pizza - sausage and cheese, etc.

Reply:You could make mini taco salads. Or fill them with Guacamole.

A cream cheese, corn, and jalapeno slurry. It won't look pretty, so garnish the 'pies' with a wee bit of black olive and tomato. Throw an egg into the 'slurry' for best results, I think.



I make a sort of hot dip with cream cheese, jalapenos, black olives, salsa, refried beans, and corn. It bakes quite nicely, but would be too liquid for your purposes.



And even though it's a bit junk-foody-gross, it's such a neat idea that I think I'm going to try it. I'll return and add to this if I do.

Reply:good idea !!! How about making mini meatballs with a melon baller (spiced any way you want). and precook them on a baking sheet. When you are ready to serve, plop a ball in each, and top with a small amount of cheese. under the broiler just to melt the cheese

Reply:I would fill it with spanish rice, a teaspoon of salsa, a dollop of sour cream and a black olive to finish it off!

Cute idea, but I would only fill them with something like shredded lettuce, towel dried and topped with a small seedless tomato chunk and a dash of chili powder, and maybe 3 pieces of grated cheese.
Reply:Ooohhh... you could make tiny little nacho bites, some salsa, sour cream, cheese, chives and a black olive slice would be nice. Or you could do a twist on a frito pie and put a spoonful of chili and a dollop of cream cheese on top and put them in the over for a minute until bubbly. Or you could fill them with spinach artichoke dip... the possibilities are endless.
