I have some chickens laying eggs when I try to have hard boiled eggs the shells come off in little tiny chips?

Prick the small end with a sterilized needle before boiling. The shell will come off easily...or it should. I have never tried it with eggs that fresh though.

Reply:That is because the eggs are too fresh. Older eggs hard boil better and the shells come right off. Just let them sit for a week or so before you boil them.
Reply:sounds like you are not giving them any oyster shell to eat. If they eat oyster shell it will give you a harder shell when they lay next. Oyster shell = calcuim for the hens.

For poaching, frying, scrambling, the fresher, the better! The flavor, the appearance, Mmmmmm!



For hard-boiling, freshness is a curse!



Eggs that have been properly stored in the fridge for a week or so, will have stiffened up the egg sac (the membrane under the shell), and this will have begun to 'turn loose' of the inside of the shell.



This makes for easier cracking and clean peeling. It's also an excellent thing to do with eggs that are 'getting on' a bit.

Reply:I hate that!! It makes it so difficult to get the darn thing peeled. It almost make it not worth it. I don't know why some do that and some don't but I understand the frustration.
Reply:try peeling them under running cold water
Reply:Start in cold water, then when you have them cooked, drain %26amp; shake in pan so shells crack. Cover with cold water %26amp; chill well. They should peel well. Another thing that can be a problems is if the eggs are too fresh!! Maybe you need to keep a bowl of eggs that you "age" for a week before cooking them..
Reply:I don't know how long you are boiling them, but here is what I do. Since you are getting your own eggs you know that they are fresh, place eggs in unsalted cold water and bring to a boil. Once at a full rolling boil, let go for 12 minutes, immediately place pan in sink under cold running water and when eggs are cool enough to handle, roll them around breaking the shell all the way around. Let sit in cold water for a few minutes and peel. Don't let them sit too long or they will not peel easily and you will have the same problem.
Reply:if you are placing into hot water that would be a problem. start with cold water place eggs in then heat.
