Are you supposed to rinse the big shells after you cook them?

never rinse pasta. it washes the starch off and keeps the sauce from sticking to it. instead drain well and return to the pot. add some sauce and cook over med low heat for a few seconds. this will make the pasta "suck" in the sauce and flavor it.

the only reason you would rinse pasta is if you need to shock it to stop cooking because you will be reheating it later...when you just drain it, it still cooks which isn't a problem if you're going to serve it relatively soon.
Reply:If it is going into a sauce other other dish you don't rinse it. My mom did sometimes though "to remove starch".
Reply:What are you cooking - escargot, cockles, mussels or what
Reply:you never rinse pasta
Reply:If you are making a salad you should rinse all pasta in cold water to stop the cooking process. If it is going into a pot os hot sauce there is no need to rinse.
Reply:I never have... You aren't supposed to rinse any kind of pasta.
