Why is it difficult to peal off egg shells from a hardboiled egg only sometimes?

The eggs are probably overcooked.



Here is how restaurants cook their hard boiled eggs.



Bowl a pan of water and add 1 Tbsp white vinegar. Carefully lower the eggs into the water. Set an egg timer for 12 min. Reduce heat to simmering. When the timer goes off, put the eggs into an ice bath (cold water and ice cubes) for about 30 min. Do not peel until cold. They will peel perfectly.

The fresher they are the harder they are to peel.
Reply:the longer the eggs have been on the store shelf the easier they peel. also, cool them completely (refer overnite) helps too!

new eggs just don't peel worth a darn!

Use eggs that have been in your fridge a few days.



Put your eggs in the water, then turn the heat on high and add 1/2 tsp salt to the water.

As soon as the water begins to boil turn off the heat, put a lid on the pot and set the timer for 10 minutes.

Once the 10 minutes are up dump the hot water out, add ice and cold water and chill for about 3 to 5 minutes.

The eggs will be easy to peel and your yolks will not be green..
Reply:Depends on the heat. A freshly hard boiled egg cooled quickly enough, the shell comes off easily. Still warm, it'll either leave the 'skin' behind, or take half the white with it. The trick is, to stop the eggs cooking by keeping them under running cold water until they are cold. If you leave them to cool 'naturally', you will have a black ring around the yolk.
Reply:Eggs are harder to peel when they are fresh. Try peeling them under running cold water.
Reply:For some reason, new eggs don't want to peel worth a darn. If you add a lot of salt or a little vinegar to the water, they will peel every time!
Reply:I think it just depends on the freshness and age of the eggs for some reason. Also if they are at room temperature to start with? dunno if cold eggs boil better than room temp eggs.
Reply:if you dunk them into ice cold water straight from the stove they will peel easier
Reply:I've asked this question before and still haven't figured it out, I've given up and just buy them already peeled and boiled
Reply:if you put them in cold water after boiling them then roll the shells on the counter (cruching them) it will peel off easier
Reply:To ensure easy peeling, put the cooked eggs into ice water immediately after cooking them. This will shrink the membranes away from the egg, making them easier to peel.
