What are some meals you make with soft tortilla shells?

Wraps with thinly sliced turkey, pepperoni, shredded cheese, lettuce, tomato, and ranch dressing or mustard and either microwave or stick in the oven. I love baking them-- first brush the top with a little butter and preheat the oven to 400 degrees. Bake for about 10 minutes or until the top is browned nicely, the tortilla is crispy, and the filling is hot!

Chili and Rice Burritos

1 (15 ounce) can chili with beans

1/2 cup instant rice or brown rice

1 cup water

1/2 cup shredded cheese

3/4 cup salsa (optional)

about 10 tortillas

--Heat chili in saucepan. Once heated, add uncooked rice and water. Stir together and let simmer over medium heat about 10-15 minutes until rice is cooked. Don't forget to stir! Once cooked throughout, turn heat down. Place about 1/3 cup mixture on tortilla and top with 1-2 tablespoons shredded cheese and a few tablespoons salsa and roll up. Once all burritos have been made, zap in microwave for 30-60 seconds to melt cheese and reheat.



I also LOVE baked cinnamon tortillas! Brush tortillas with water or a little butter and sprinkle with cinnamon sugar. Bake at 350 degrees for 5 minutes. Cut into triangles and serve with fruit salsa made from 2 chopped granny smith apples, 1 chopped kiwi, 2 tbsp apple jelly, 2 tbsp brown sugar, and juice of one orange combined.

Reply:Make Mexican Lasagna

I use canned chicken or beef and mix it with cilantro, salsa, cumin, sauteed onions and peppers large chunk, and layer the filling with the tortilla shells and cheese and bake in a 375 degree oven for about 40 minutes. End layers with salsa and cheese.



Serve with sour cream, jalapeno's onions, black olives, or whatever you like best.



OR



Carnitas



2 lb lean pork

1 salt and pepper to taste

a dusting of pasilla pepper, ground



Cut the pork into 1" cubes.



Dust with salt, pepper, and pasilla pepper, and let rest for 1 hour.



Place the meat in a shallow baking pan in a 300 degree oven for about 2 hours.



Pour or siphon off the fat from time to time.



Drain on paper towels and serve with Salsa Cruda and/or Guacamole.



Makes 25 to 30 carnitas.





Make Posole and serve it with warm tortillas to eat the stew with. Delicious.



Posole Blanco



2 pounds good pork roast diced into 1/2 inch cubes

2 tablespoons vegetable oil

2-3 quarts water

1 no. 3 can white hominy

garlic salt to taste



Heat oil in a large pot and add the pork and stir

occasionally until

it is slightly browned. Add the water and over high

heat, cook pork

until tender. Add the hominy including the liquid. Now

heat, stirring

occasionally until hot. Add the garlic salt to taste.

Ladle into

bowls and serve with diced tomato, green onion,

jalapeno, cilantro or

sliced red radish, and fresh warm flour tortillas.

Take some shredded chicken and grated cheese (and whatever else you want to put in there-lettuce, olives, tomatoes, etc.), and put them inbetween 2 soft tortilla shells. Turn your stove on medium or medium high, and put a skillet on the burner to heat it up. You don't need oil or anything in the skillet. Once the skillet is hot, put the tortillas with the cheese and chicken inbetween and put it in the skillet. Leave the quesadilla in the skillet, and keep checking it to see if the side face-down is getting brown. Once it is brown (it may still be white with black spots everywhere-this is PERFECT), flip it over in the skillet and wait for the side that is now facing down to get like the other side (dark spots on it). Once both sides are finished and the cheese looks melted, voila! You have a quesadilla! Use a pizza cutter or knife to cut it into pieces/slices, serve, and enjoy!
Reply:Layer taco meat and enchilada sauce on the bottom of a glass casserole dish. Lay tortillas over top. Add refried beans, and cheese, add another layer of tortillas. Add more beef and sauce, bake for 20 minutes, remove, add cheese to the top. Bake another 5 to 10 minutes. Or until hot and cheese is melted on top and in middle. Voila Enchilada casserole.
Reply:I love dicing up boneless/skinless chicken breast, seasoning with taco spice, and cook in a hot skillet with peppers and onions, eating them on soft shells with cheese, sauce and sour cream.



You can layer the soft shells in a casserole dish, putting taco meat, beans, rice or whatever you like in between the layers, covering with your favorite enchilada sauce and cheese and baking. Top with fresh lettuce and onions and olives when its done.
